In this class, well learn how to make basic quick cheeses that are easy to create at home, like Ricotta, Crème Fraiche, Marscapone and pull Fresh Mozzarella from the curd. Then we will prepare a menu using them.
Menu:
Fresh mozzarella , Arugula Pesto, Caramelized Fennel and Cherry Tomato Flatbreads
Spinach Salas with Green Goddess Crème Fraiche Dressing, balsamic strawberries, candied cuts, marinated red onions.
Sweet Potato Ricotta Gnocchi with asparagus, peas and mushrooms, tossed with herbed fresh ricotta.
