Robert Courteau hosts Zachary Hunter, Spike Mikulski, Wade Fox, Jess Starwood and Gordon Walker are the featured of this NAMA Culinary Arts Webinar and demo, which focuses on summer-season foraging. Following all of the individual demos, there will be time for Q&A with these culinary arts stars.


  • Zachary Hunter will share his knowledge of Mexican fungi and leafcutter ants (Atta mexicana)
  • Spike Mikulski will talk about woodchip and mulch foraging
  • Wade Fox will explore chicken-of-thewoods (Laetiporus species) and koji
  • Gordon Walker will create porcini carpaccio (Boletus edulis)
  • Jess Starwood will focus on the surprising abundance -- and deliciousness -- of Arizona mushrooms
